Recipe Heaven

So I had a little free time to just Google around today and I discovered that Disney publishes a magazine called "Family Fun." AND I discovered that said magazine has lots of tasty-looking recipes that I want to try out! The above picture is just a simply chicken recipe, but I thought it looked really pretty so I posted it! This next picture is something I really want to try this fall, now that it is Apple Month- September!!! I'm posting the recipe too so you can try it if you'd like to! Tell me how it turns out for ya!


  • 1 1/3 cups peeled, cored, and diced apple
  • 1 teaspoon fresh lemon juice
  • 2 teaspoons brown sugar
  • 2 teaspoons apricot preserves
  • 1/8 teaspoon cinnamon
Ingredients for chips:
  • 5 (6-inch) flour tortillas
  • 2 tablespoons butter, melted
  • 1/2 teaspoon cinnamon
  • 1 1/2 tablespoons sugar
  1. Combine all the dip ingredients in a bowl, then cover and refrigerate the mixture until chilled.
  2. Brush the tortillas with butter, then cut them into wedges.
  3. Arrange the wedges on a greased baking sheet, sprinkle with cinnamon and sugar, and bake at 350ยบ F until golden brown, about 10 minutes. Let them cool before serving. Serves 4 to 6.

Oh Lonely Weekend...

This morning my hubby left to coach the golf team while they are at a tournament in Ohio for the weekend. So that means I have the apartment to myself - my lonesome self - and of course means that I can have my friend Samantha over and have a girls night! (This automatically means that we are going to cook something...) I am thinking that it would be fabulous to have an appetizer night- seeing how I am officially addicted to Target and bought lots of new serving plates and bowls that I can't wait to use (hey! I legitimately needed them!). See? Aren't they fab??

By the way I also needed the canisters and the clothes. (o:
Yesterday morning I made french toast - it was really yummy! This was enough for two pieces each: 3 eggs, 1/2 cup milk, a touch of both nutmeg and vanilla - all whisked together. Soak the pieces of bread on each side and fry in a nicely buttered pan. Make sure you leave them in the frying pan long enough! The last one I made had all the extra egg in it and I didn't leave it on long enough for it to get to the egg in the middle! )o: Anyways- here it is!

Well, I will keep you all posted on whether I have a wild girls cooking night or not- right now I should probably get out of my PJ's and into my regular schedule! Be back soon!

First Post!

 Chicken and Peppers over Alfredo Linguine

Today was the first day of my brand new job at the YMCA! And so... I had to make dinner quick and easy (and by 3:30!!!!). I have a feeling that dinners at our house this semester will be at very random times, given our class and work schedules.
This dish was quick and easy - and didn't require any obscure ingredients that I would need to go out and buy specifically for it. Dan LOVES alfredo and linguine so I thought this would be a nice thing to make.

Boil enough noodles for two (about 10 minutes) while you make the chicken topping and the sauce.
In a large frying pan, pour about 2 TBSP olive oil and saute your chicken. Add the chopped up green and red peppers as well as a few shakes of Italian Seasoning to the chicken after it is mostly cooked, turn the pan to medium-low and let the chicken brown slightly.
The alfredo sauce is amazing - start heating these ingredients up in order after you have the chicken and peppers going. Make sure you stir constantly with a whisk and that the heat is medium-low the entire time.
  • 2 TBSP butter
  • 1/2 cup half n half
  • 1 tsp minced garlic
  • 3/4 cup grated parmesan cheese (added gradually - make sure it melts nicely before adding more)
  • 1 TBSP dried basil
If you find that your sauce is too thick, simply add a little more half n half. The sauce will definitely thicken quickly after it is removed from the heat. No fears- you can warm it right back up if you need to!
What I did was strain all of the water out of the pasta after it is nice and tender, and add it right into the alfredo sauce (turn the heat off first) and mix it up. Serve onto plates, top with the chicken and pepper mixture and enjoy!

Life has been pretty busy this week. This new job - since I will be working with children- has required me to fill out tons of paperwork and to drive different places to get papers signed and fingerprints checked and medical exams done.... Sigh! But I'm glad to say that I'm all set with that and have started working. (o: The kids are going to be great and I'm going to have a lot of fun!
Aside from the craziness of getting this new job in order, I have had to go to classes every day, keep up with homework, manage my household (including cooking dinner- IF I have enough time!), work my other job, and babysit! You know what? I got through it! And even though I'm tired- I haven't gotten frustrated yet!

Just glad that it is Friday...

Is this really about food? Really?

Over the past few weeks I have been drawn to the idea of keeping a journal. But I’m not one of those types that can wake up early in the morning (before the coffee and the world are really ready for me) simply to write pages and pages every day. So let’s start a blog. Just a weekly thing- a way to express what is going on my life that I can have a little fun with – and share with the ones I love.

Now, I really have no idea what I am doing. But I think that’s part of the journaling experience. I need to explore it and figure out my style before I can really feel like I own it. So is this blog really going to be about food? Really?

Though cooking, baking, and enjoying the feeling of being a hostess are things that I absolutely love, I think this blog will turn out to be much more than a recipe and picture site. So no – not just food. More like a big ol’ helping of my life – cooking, family, friends, and what I happen to be interested in and thinking about as the days go by… Welcome to my journal blog! Enjoy!
